Danish Apple Pastry Bars
2 1/2 cups of flour 1 teaspoon of salt 2 sticks (1 c.) butter 1 egg yolk 1 teaspoon of cinnamon 1 cup of corn flakes 8 to 10 tart apples, pared and sliced (8 c.) 3/4 to 1 cup of sugar 1 egg white Combine flour and salt. Cut in butter. Beat egg yolk in measuring cup. Add enough milk to make 2/3 cup of liquid. Mix well; stir into flour mixture. On floured surface, roll half of dough to 17 x 12 inch rectangle. Fit into and up sides of 15 1/2 x 10 1/2 x 1 inch baking pan. Sprinkle with corn flakes; top with apple. Combine sugar and cinnamon; sprinkle on top. Seal edges; cut slits in top. Beat egg white until frothy. Brush on crust. Bake at 375ºF. for 50 minutes. Combine 1 cup sifted powdered sugar and 3 to 4 teaspoons milk. Drizzle on warm bars. Makes 3 dozen. Danish Apple Pastry Bars 2 1/2 cups of flour 1 teaspoon of salt 1 cup of lard or shortening 1 egg and enough milk to make 2/3 c. 1 cup of crushed cornflakes 8 to 10 medium apples 1/2 cup of sugar 1 teaspoon of cinnamon Cut shortening into flour and salt. Add milk and egg. Blend with fork. Roll half of the dough to fill a 10 1/2 x 15 1/2 inch cookie sheet. Sprinkle bottom crust with crushed cornflakes. Peel and slice apples and place over crust and flakes. Sprinkle with sugar and cinnamon. Roll out other half of dough and place on top. Pinch edges. Bake in preheated oven at 400ºF. for about 45 minutes - while warm - frost with powdered sugar mixture. Pour over warm crust. |
