Default Apple Pastry Squares

Apple Pastry Squares

2 1/2 cups of sifted flour
1 tablespoon of sugar
1 teaspoon of salt
1 cup of lard
1 egg, separated
Milk

I make 1 1/2 recipe. Sift together flour, sugar and salt. Cut lard in
with pastry blender until like coarse meal. Beat egg yolk in measuring
cup and add milk to make 1/2 cup. Add to lard mixture; mix just enough
so dough shapes into ball. Roll out half to 15"x11" rectangle transfer
to baking sheet. Spread evenly with filling. Place top dough and seal
edges. Beat egg whites until stiff. Spread on top crust. Bake 400ºF.
for 25 to 30 minutes. Mix confectioners' sugar and lemon juice,
drizzle over top of crust while hot.

Filling:

3 cups of sliced apples
1 cup of sugar
4 tablespoons of cornstarch dissolved in 1/2 cup of water
1 teaspoon of cinnamon, or to your taste

Put filling ingredients in saucepan and cook until thick. Cool. Spread
over bottom crust.

Apple Pastry Squares

1/4 cup of brown sugar
2 tablespoons of cornstarch
1 1/2 cup of water
5 cups of sliced, peeled apples
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
1 tablespoon of lemon juice

PASTRY:
2 cups of flour
1/2 teaspoon of salt
2/3 cup of cold shortening
2 egg yolks, beaten
1/4 cup of water
1 tablespoon of lemon juice

Combine sugar, cornstarch, water and spices. Mix well; add apples;
heat to boiling, stirring constantly. Reduce heat; simmer 5 minutes.
Add lemon juice; set aside. Blend pastry ingredients. Mix until
crumbly, and makes ball. Roll out on floured board, 13 x 9 x 2 inches.
Spread filling over pastry. Roll out remaining pastry to form top
crust. Seal edges. Cut a few small slits on top crust. Bake at 400ºF.
for 40 minutes. Cool and drizzle with glaze.

GLAZE:
1/2 c. confectioners' sugar
1 tbsp. milk
1 tbsp. butter or margarine
1/2 tsp. vanilla
