Default Mom's Beef Stew

Mom's Beef Stew

oil to cover bottom of pot

1 pound stew meat seasoned with salt and pepper

1 cup flour

1 chopped onion

2-3 smaller peeled whole onions

Carrots, peeled and chopped to bite sized pieces

Potatoes, peeled and chopped to bite sized pieces

Cover the bottom of a big pot with oil and heat. Put the flour in a

brown paper sack along with the meat and toss to coat. Brown meat in

hot oil along with the chopped onion. Stir until all sides of the

meat are browned. Add water to cover and turn heat down. Simmer

until meat's almost tender, or until it's 45 minutes before you want

to eat. Add carrots and the whole small onions. A few minutes later

add the potatoes. Let stew until all vegetables are done. (Any other

vegetables are allowed! Rutabaga, cabbage, etc). If juice is thin,

shake 1/2 cup water and one teaspoonful of flour in a covered

container (shaking the flour and water together first prevents lumps!)

and stir in. Eet smakelijk!
