Garbanzo Bean Soup
3 can garbanzo (chick peas) beans 1 small onion, chopped 1 pod garlic, minced (or garlic powder) 1 large potato, cut in small cubes 1/2 lb. smoked sausage, cut in then slices 1/2 head small cabbage, cut in small pieces (remove thick stem pieces) 1 pkg. Spanish food flavoring and coloring (found on international food shelf in grocery store) (You can also use a pinch of saffron, but more expensive) Put 2 cans of beans in large pot with all other ingredients except cabbage and 1 can of beans. Add four cups of water to pot and bring to a boil. While these are coming to a boil, puree the last can of beans and add to pot. Turn heat down to low and add pureed beans. Simmer for about 45 minutes. Add cabbage. Cook until cabbage is done and add salt and pepper to taste. (Remember sausage is already salted. You may not want to add more salt. Turkey sausage works well with this recipe also.) Serves six or more. |
