Aunt Ellen's Casserole (Serves 3 - 4)
1/2 kg (1 lb) lean pork in small cubes 1 onion, chopped 2 cloves garlic, chopped 50 g (2 oz) butter 2 1/2 dl (1cup) rice 1/2 l (1 pint) chicken stock 3 tomatoes, peeled and cubed (or 1 can) 2 green peppers, cubed 2 1/2 dl (1 cup) fresh corn ( or frozen) salt, pepper and paprika to taste Melt butter in a stew pan and brown meat, onion and garlic. Add rice and stock and let it simmer for 1/2 hour, until the meat is tender. Add tomatoes, green pepper and corn and let it simmer 5 minutes. Add spices and serve, together with green salad or bread (if there is someone who really, really, really likes bread!) |
