Multi-bean Soup with Pasta and Sausage

1 lb pkg multi-variety mixed beans

1 28 oz can crushed tomatoes

1 to 3 tsp Cajun seasoning or to taste

2 Tbs. olive oil

2 to 3 Tbs chopped cilantro

1 cup raw macaroni cooked

1/2 lb sliced kielbasa sausage or frankfurters

chicken or beef broth

Minced garlic or garlic powder to taste



Soak beans overnight in water. Rinse and drain. Place in pot and cover with
water 2 inches over top of beans. Cook beans until soft and tender and drain
well. Return to pot and add chicken or beef broth just to cover. Add
tomatoes, olive oil, cilantro, Cajun seasoning and garlic to taste. Simmer
about 20 minutes to blend flavors. Add cooked, drained pasta. Soup will
thicken as it cools becoming more soup/stew like. Serves 8 to 10. Freezes
potions if desired.
