Salsa Poached Fish
Ingredients 6 - 8 fresh fish filets (cod, salmon and tilapia are my staples) Olive oil 20 or so ounces of salsa (fresh or jarred; any level of spice) 1. Rinse fish and pat dry. 2. Heat olive oil in skillet on medium high heat. 3. Place fish in skillet and cook on for 3 minutes on each side to seal in the flavors. 4. Pour just enough salsa over fish to thinly cover and reduce heat to medium. 5. Cover and steam for 15 minutes or until fish flakes easily. I usually serve with Spanish Rice or Couscous, corn cake and Tostitos chips. It turns out like a fish stew if you overcook the fish, but then you can scoop it up with the chips! Yum! _______________________________________ I'm always looking for new low carb side dishes. This one is amazingly simple but big on flavor. Be sure to undercook the veggies before baking so they don't get over done. I only used broccoli but I'm sure it will be wonderful with cauliflower too. Enjoy!
