Default hot cross buns........

I found this one in Farm Journal's Complete Home Baking Book.
Although
I haven't made these, I can say that every recipe I've ever prepared
from this book
has turned out beautifully.

HOT CROSS BUNS

6 to 6 1/2 cups sifted flour
1/2 cup sugar
3/4 tsp. salt
2 tsp. ground cinnamon
2 pkgs. active dry yeast
1 1/2 cups milk
6 tbs. butter or regular margarine
3 eggs
1 1/4 cups currants
1 egg yolk
2 tbs. water
Icing (recipe follows)

Combine 2 cups of the flour, sugar, salt, cinnamon and undissolved
yeast in mixing bowl, mix thoroughly.

Combine milk and butter in saucepan. Heat until very warm (120-130
F).
Add to flour-yeast mixture, beating with electric mixer at medium
speed 2
minutes. Add 3 eggs and 1 cup of the flour, beat 2 minutes. Stir
in
currants and enough flour to make a soft dough.

Turn dough out on lightly floured surface. Knead until smooth and
elastic,
about ten minutes. Place in greased bowl, turning over once to
grease
top. Cover and let rise in warm place until doubled, about an hour.

Punch down dough. Let rest ten minutes. Divide in 18 pieces, shape
each
piece into a ball. Place equally spaced in geased 13 x 9 x 2-inch
baking
pan. Combine egg yolk and water; mix well. Brush with egg yolk
mixture.
Cover and let rise in warm place until doubled, about 45 minutes.

Bake in 375 F oven 20 to 25 minutes, or until golden brown. Remove
from
pan; cool on rack. Frost with icing before serving. Best served
warm.
Makes 18

Icing: Combine 1 cup sifted confectioner's sugar, 1 tbs. milk and
1/2 tsp.
vanilla in bowl; beat until smooth. Drip icing from spoon over
center of
each bun both lengthwise and crosswise to form crosses.
