Default Citrus Grilled Swordfish

Citrus Grilled Swordfish


Servings: 4 - 6 servings.


What you need:


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 stick unsalted butter
1/2 lime zest
1/2 lime juice
1/2 orange zest
1/2 orange juice
1 tablespoon cilantro
2 pounds fresh swordfish
salt
ground black pepper
lime wedges
orange wedges
1 sprig cilantro


Ready, set, cook!


1. In small bowl, beat butter with lime and orange zests. Slowly
add lime and orange juices, beating constantly. Stir in chopped
cilantro and set aside.

2. Place swordfish on grill over hot coals. Grill 4 minutes on each
side. Brush with citrus butter while grilling.

3. Remove steaks from grill when done and season to taste with salt
and pepper. Serve with remaining citrus butter, wedges of lime
and orange and sprigs of cilantro.
