Grilled Parmesan Tomatoes


Servings: 4 servings.


What you need:


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 teaspoons olive oil -- divided
4 medium ripe tomatoes -- 1/3lb,cored, sliced 1/2"
thick
1 clove garlic -- minced
2 tablespoons minced parsley
1/8 teaspoon black pepper
2 tablespoons grated parmesan cheese


Ready, set, cook!


1. Heat broiler. Grease baking sheet with 1 teapoon oil.
Arrange tomato slices in single layer.

2. In small bowl mix remaining oil, garlic, parsley and pepper;
drizzle over tomatoes and sprinkle with cheese.

3. Broil 5 inches from heat 3 minutes or until cheese is
golden brown.
