Christmas Crinkles
Women love the taste of chocolate and mint together-the man who owns Bruester's Ice Cream told me this! I know EVERYONE loves these cookies! Ingredients: 4 ounces white baking chocolate, coarsely chopped 1/3 c. butter or margarine 1 1/2 c. sugar, divided 1/4 c. buttermilk 1 tsp. vanilla extract 1 large egg 2 c. all-purpose flour 1/2 tsp. baking soda 1/4 tsp. salt 1/2 c. semi-sweet chocolate chips 1 T. vegetable shortening Hard peppermint candy or candy canes, crushed Directions: In a small heavy saucepan, melt white chocolate over low heat, stirring constantly. Remove from heat; set aside. In large mixing bowl, beat butter and 1 cup of the sugar until creamy. Add melted white chocolate, buttermilk, vanilla and egg, mixing well. Combine flour, baking soda, and salt; gradually add to butter mixture, beating well. Cover dough and chill one hour. Preheat oven to 375 degrees. Shape dough into 1-inch balls; roll balls in the remaining 1/2 cup of sugar. Place 2 inches apart on ungreased baking sheets. Bake 7 to 8 minutes or until bottoms are lightly browned. Cool slightly on baking sheets; transfer to wire racks to cool completely. In a small saucepan, melt chocolate chips and vegetable shortening over low heat, stirring constantly.
