I sometimes make this in the summer to go with sliced tomatoes, but it
could be served on its own.

1/2 cucumber per person
kosher salt
cracked black pepper
(other seasonings of choice)

Preheat oven to 425 degrees F.

Peel cucumber and slice in half lengthwise. Scoop out all seeds and soft
pulp. Slice each half crosswise into two pieces.

Brush cucumber pieces on all sides with olive oil or melted butter.
Sprinkle with salt, pepper, and herbs.

Place pieces in oiled baking dish, keeping well separated.

Roast 10-12 minutes, turning once, until surfaces begin to brown.

Note: Do not overcook or cucumbers will be too soft.

I got this huge cast iron skillet, I love it to you do all most
anything in it. Or use a cookie sheet or roasting pan they work too.
I take foil and line it, spray with cooking spray, and add small hunks
of butter, spices like ie, marjoram, rosemary, thyme, turmic, pepper
and salt, peel and wash the cucubmer, slice it into thin spears. Drop
in and bake in preheated 350 degree oven watching to see they do not
burn turn them over in 10 mins when it done it is cutable with a fork.
This my same recipe I use for tomatos, squash and tater hunks to roast
them. I got this idea watching Julia Childs cook banana peppers the
same way.

Default Roasted Cucumber

Christ, pick the darned thing straight off the vine. Peel with your pocket
knife and grind with your teeth. If you have a survival type salt and
pepper shaker in your pocket, add some. Lets' expend 2.10 kilowatt hours of
energy cooking a damned cucumber.
How to roast anything:
Lightly oil using any darned oil you'd like.
Corn
Olive
Rapeseed
Quaker state
Dress with a few herbs, usually more than two and less than a thousand.
Place under oven broiler till brown.
