Default rise times

I have a bread machine which has programmable times for all areas of
operation, including rise times. I am thinking of making the rise
times 90 minutes each for three rise times. Anybody have any other
ideas?

I'd like bread machines to include a photoelectric sensor for detecting when
the dough has risen so far as practical, so as to abort the rise cycle at that
point. Otherwise, I would like two buttons: one to abort the rise cycle when
the rise completes prematurely, and the other to prolong it for some interval,
say 10 min. for each button punch. That would be good for people who
like to watch their bread machine doing its stuff.

I had such things in mind when my VIC-DAK self-destructed unaccountably
many years ago.

Absolute precision in predicting rise times is another possibility, which I am
unfortunately unable to address at this moment. I have deduced, however, that
it should be easier for conventionally yeasted doughs.

Default rise times

..
experiment;
try 90 minutes...and see how it comes out;
you can adjust it, more or less, the next time

i use a small portable timer for my rises

i live in Las Vegas, where we have temperature extremes;
so i have to adjust sometimes,
depending on the indoor temperature, sourdough mix, etc
