Default Gassenhauer Brot

G'day all;

Have any of you reading here ever had "Gassenhauer Brot"?

I fell in love with it on my last trip to Germany, and am working on
creating it from memory. I'm getting close, but can't seem to nail it. If
anyone here has any tips or ideas to add, I'd love to hear 'em...

Default Gassenhauer Brot

Hi Dusty

it's a bread with yeast and sourdough, a mixed rye bread with 70 rye flour
and 30 % wheat flour

Gassenhauer is a fancy name...
