Default Semolina "Pane Siciliano"

Like a bad penny I'mmmmmmmmmmmmmmmm back LOL!! I've been baking
along with nothing significant to report but last week I used my
Carl's starter and sorry don't have recipe in front of me but I
substituted some semolina flour in it and it was great!!! that loaf
was probably the best I've made yet.... I am now on day two of "Pane
Siciliano" recipe from sourdoughhome.com (Bread Baker's Apprentice),
which doesn't say who rewrote this but I can't wait to get it out of
oven, in a few days LOL.... I started this one with the Italian
starter and Dicky's refresh from teeny starter and I ended up with
starter for the pate fermente, replacement in fridge, and jar just fed
to make something else :-) ...

Just went by oven, on way to get me another beer :-) and my pate is
almost doubled and will go in fridge for a couple days..... I'll let
y'all know how it turns out...

I just wanted to add that I've been a little behind reading posts but
really LOVE it all... there are some real dumb***** that seem to have
no other purpose in life but to start trouble... I even read them
because I really enjoy the retorts... they even post good info
sometimes.... this is a really good group as a whole and I would have
to be thrown out forcibly hanging on by tooth and nail !!!! I will
ALWAYS be a newbie, as I am toooo old to really have all that
technical stuff y'all know really sink into this old brain, but I will
keep on trying to learn what I can and enjoying all of you!!!
