I have heard so much different opinions how the sushi rice should be
cooked. What are your experiences? Do you have a favorite recipe?

What do you think about using vinegar and sugar?

OTOH, there are as many recipes as there are people who make them.
All you need to do is start with one of them and adjust for your
preferences if you don't like it.
