the head chef was out last night & after observing some of the basic
etiquette and letting the demand from other customers die down i
persuaded the fill-in chef to suggest a few things and one of them
them was a salmon/tofu/yuzu kosho combination on top of a cucumber
slice. the twist was the addition of basil to the yuzu kosho. it was
pretty interesting.

neither, actually - no rice.

imagine a very small ice cream sandwich except having the (silken)
tofu being the ice cream & the salmon being the cookie, placed on top
of a sliver of cucumber, then topped with the yuzu kosho & basil.

You evil person - now I need a sushi fix........
