What does "dressing a whole tuna" mean exactly? What can one
expect in terms of pricing? I might want to go pick some up. Thanks.

I think it means taking a whole tuna and going medieval on it with
really big knives.

If prices are similar to what I see around Boston Asian Markets, anywhere
from $12/lb - $20/lb. Quality and price will vary. We probably don't see
the best quality in the markets than what you will see if you go to this.

The good thing about being in on a dressing is being able to get the
"undesirable" parts for next to nothing.

Cheeks, bones (for stock) and fat are there for the asking, most of the
time.

Dressing a fish is the equivalent of Butchering a cow.
The "cutting up" wll take place at 12:00pm and at 3:00 pm on Sat Nov =
20th
and Sun Nov 21st.
Ootoro will be sold at 49.99 /lb.
Chutoro at $ 39.99 /lb.
Akami at $24.99 /lb.
Maguro Sushi (akami) will be sold in 7 piece packs for $8.00 per pack.

Whoa! I was way off on my pricing.. I didn't think Akami would seel for
$25/lb. But maybe since it's fresh off the fish..

Someone else posted the prices, but if you Google, IIRC a link was
posted to pictures from the tuna dressing in Chicago's Mitsuwa, in
case you're interested in a preview of what it will probably be like.

I made a mistake, my apologies! I _thought_ the a link to
the pictures had been posted here, but that was my faulty memory.
Googling led to a reference that indicated they were e-mailed to me
by a poster who goes by "Tea". After the initial drooling, I failed
to keep a copy of the pictures, so maybe the person who had them will
see this and contact you. Again, my apologies.
