How does good rice taste?
 
Am I supposed to be able to taste or smell the vinegar dressing in
sushi rice? Does plain sushi rice taste good by itself?

It should be a subtle hint of vinegar and sweetness. White rice does
not taste the same, and does not hold together as well.

Short grain sushi type rice is quite good. We use it (sans seasoned vinagar)
for dinner quite often.

as in should it taste or smell "vinegary"? no

if you mean plain as in with no sushi topping, it's not just taste
(which does matter) as much as it is texture & consistency; it needs
to be sticky enough to hold together with gentle pressure, yet still
be light enough so as to complement the texture of the topping. once
you sample properly prepared sushi rice (which is not that often here
in the states) it takes the sushi to a different level. here in LA,
the best rice i've had is made by shige at sushi sushi in beverly
hills.

I almost always use sushi rice with or without seasoning for meals ( when I
use it seasoned it's because I have leftovers from making sushi) and it's
very good! I like it because it holds together well and doesn't fall off
your fork like converted rices. Other than that I use Jasmine or Basmati...

What else is good in the Los Angeles area? My girlfriend mentioned a few
places.. one was in Beverly Hills, which was her favorite.

Man, I can't wait to visit California. :)

I would highly recommend Asanebo in Studio City. I always order Sashimi
Muriowase, but my kids and friends have many of their other fine offerings.
If you thought you didn't like Uni, ask for the Uni! And their sake list is
great!

I've gotten e-mails, from other customers there, asking me NOT to mention
Asanebo on Usenet, because it's a small place.

The only problem Art has with uni is that anybody else eats it-- same
problem I have.

a while back someone visited LA & wrote an article about "his" top 10
that was referred to in this NG. i've been to maybe 5 of those 10.
sushi sushi is one of those 5 is my favorite within that 5 - despite
the fact that prices seem reasonable until you discover that they are
for a single piece. IIRC, matsuhisa was one of the other 5 on that
list, but as my preferences lean towards the more traditional as well
as to patronize a place i can afford to return relatively frequently
to so as to cultivate a rapport with the chef, combined with reports
from friends who've been there & been underwhelmed considering the
amount they charge, i've never seen the point of going there.
