I recently went to the Florida Department of Health to investigate if
Southern Whiting could be eaten raw. Here is the answer I just received. ************************************************** ******** "Whiting is a very common near shore fish. If the fish is prepared properly the fish has no more inherent problems than other fish that is to be served raw. A couple things for you to consider. Sushi quality is usually used when referring to pacific Tuna which has been shown that they consistently do not harbor parasites. Perhaps that would hold true if no regard were given to the type, condition, and age of the meat in question. However, people are not idiots. Restaurants that serve sushi know how they are going to serve fish, just as restuarants that serve Steak Tartar know how they are going to serve it. Historically, people simply have not been falling over at a 50% rate, or anywhere near it, from eating raw meat or fish. |
