Default Anyone know what the tray are called?

Does anyone know what the trays that sushi is served on are called?
both the small ones for serving a few pieces as well as the larger one
for big orders?

If you are referring to the wooden tray with legs, its is call a geta.
Here is a site with many sizes.

If you are referring to the box lunch tray (sometimes served with sushi in it),
that is a Bento Box or Obento.

There is a third method of serving: on rather attractive,
usually free form plates. Do these have a special name? I wonder
how they ever came up with the geta since it looks like a
miniature chopping block even it is also aesthetically pleasing?

Called geta because they look like the classical wooden platform shoe worn
to keep your tabi and feet out of the mud.
