Default OZ & JAMES' BIG WINE ADVENTURE (BBC)

I've been searching for Oz's French term he describes in the BBC series
mentioned above that sounds to me like "tehrwar" - to describe the
difference in two identical grape wines that are changed by their
environmental influence..........

What is the spelling of "Tehrwar"???
