Also, it goes down very well with game, not least in a casserole that has been stewing for hours and hours on low heat. A very small amount of bitter chocolate in the sauce is not to be sneezed at. My Italian teacher (who is not from Verona but from Venice) swears by lamb steak with Amarone. I don´t quite agree, there are better wiens with the woollies. I think he was human organs and a sweet white wine. He even joked when a
guest at his house complemented him on the food and asked what it was. He said if I told you, you would not eat it. When the police were investigating murders it turned out that all the deceased had their internal organs liver, thyroid, pancreas removed..and appeared to be surgical. What a gross movie and book.
