I remember reading somewhere that real balsamic vinegar (the expensive
stuff) is made by the action of acetobacter directly on grape juice, rather than on wine. Is this true or false? Also, by what process is the cheap stuff made? TIA! Tom S |

The most extreme example I am aware of was listed in a catalog I received this year. You may have a 3.4 oz. bottle of Del Cristo of Modena's Paradiso Balsamic for only $US 549.95. It is supposed to be over 150 years old and aged since 1850 in antique barrels of juniper and oak. My mailbox is always full to avoid spam. To contact me, erase from my email address. Then add .
