I just did the final rack on a Sauvignon Blanc kit, 6 gal racked to
two 3 gal carboys. I am planning on letting them sit for at least 3 months before bottling and am using a vacuum seal (vacu-vin stopper on bung) instead of an airlock. Can anyone think of any potential problems with this?? |

Can anyone think of any potential problems > with this?? I depends on how good the vaccum seal is, how long it will keep the seal, how often you test the seal, and how full the carboy is. I use the same principle with a MityVac vaccum pump and degas the wine during bulk aging by using the pump once a day or so. I fill the carboy to one to two inches below the bung. Guy |
