Default Red wine vinegar

Does anyone here make it? I found this link and I'm going to try it with a
few litters of red.

sulphated the wine could it already have the necessary bacteria? I put a
cup out with cheese cloth over top and I'll see what happens, if it works
I'll add it to the rest and it should take off I'm guessing.
