Default rose wine

This is probably a stupid question, but when you make rose wine out of
petals, do they need to smell?

I have a rose bush that is really blooming right now. I smelled a
flower or two and they have absolutly no smell! Nada! Zilch!

Will they still do their thing even if they have no smell when picked?
