Another Yeast Question
 
I'm making my first batch of wine.The yeast packet says for 1 to 6 gals. I
am making 1 gallon.
Should I just use the whole packet or a smaller amount?

Once you open it, you should use it all. May I suggest you start
a second gallon and split the yeast between them.

In the past, when I was really poor, if I was going to start another batch
within the month, I would use half a packet, then fold it closed tightly and
keep in the refrigerator. I never had any trouble doing this. But yeast is
cheap and I am not as poor as I use to be and then there is the fact that I
have not started a batch smaller than three gallons in many years. ;o)

yeast......
