Default high hopes

As nature works her magic, some of the sutff starts to show promise;
tasted the marsanne this week during racking. Not bad at all. A tad
acidic (I know, seems like an oxymoron with marsanne), but surprisingly
good flavor. Now for the bentonite, some cold stabilization - and we
may have a nice one.
