Default Any books geared towards the home winemaker aspiring to go commercial?

I am familiar with the winemaking process at the 5 gallon scale, but I
am curious to learn how winemaking is done at the small commercial
scale. I'd like to find out, for example, what kind of containers are
used, or what kind of presses are needed. Is there any good book on
that subject? A book that is geared towards the home winemaker aspiring
to open up his/her own winery? I know that there is a business side to
this, and the business side is of utmost importance, but for now I'm
just interested in the technical side of it.

I like Margalit's Winery Technology and Operations and there is a new
one by Bird called 'Winery technology something or other'. Sorry, I
don't have it at my fingertips. Presque Isle Wine Cellars sell both of
them.

I should have mentioned they sell a lot of hardware for small wineries
there, you can look through thier catalog and get a general idea of
what people use.

Another idea to save a buck it to find out who buys stainless steel
scrap in your area and see what is available in the sizes you are
considering. Dairies use stainless and food processors do too. You
have to count the cost like all things, but sometimes you can stumble
across what you want cheap.

You can buy used winery equipment too, I know Bully Hill in New York
had a lot of excess equipment a few years back.
