Default PERKING UP A BLAND WINE

i made 5 gallons of persimon wine last summer. it has good
alcohol content but really not much flavor at all. would it be wise to
add welches grape consentrate and sulphite it to bring up the taste? any
reccomendation on amount of grape concentrate to start with or is it
just trial and experiment. best regards, lucas
